Cauliflower Pomegranate Salad
Ingredients:
- ½ cauliflower chopped into small florets or grated
- 1 cup chopped veggies, cucumber, cherry tomatoes, capsicum.
- ½ cup pomegranate seeds
- 1 bunch parsley chopped
- 2 tsp Rootcare ROOT DETOX & RESTORE powder
For Dressing:
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- Salt and pepper as per taste
- ½ teaspoon Moroccan spice mix or Garam masala
Directions:
- In a bowl, mix chopped florets, pomegranate seeds, veggies and parsley.
- In a separate bowl make the dressing by mixing all ingredients listed.
- Mix the dressing with the raw ingredients.
- Serve fresh
- If you do not have parsley, you may use mint or coriander. Add some sugar to dressing if you have a sweet tooth.
- You may add roasted nuts to this salad for extra crunch like walnuts peanuts or cashews.
